Wow, I have to say I'm really torn.
On the one hand, pineapple and jalapeno on a pizza sounds mouth-wateringly delicious. On the other hand, Joe and Sal's is as Italian of a pizza shop as you'll find in New York. It's definitely not a combo you could easily find en Italia, as Joe and Sal said themselves.
That said, maybe there's a way to "Italianize" the Lena special. Instead of jalapenos you could use Calabrian chili peppers, which would capture the same pickled spiciness but add a bit of southern Italian flair. And to take some of the sweetness (arguably its most controversial aspect) out of the pineapple, you could add some sharp Parmigiano Reggiano cheese.
Just pitching some ideas--ultimately it will be up to Joe and Sal to make the final call. I could definitely see myself ordering the Lena special next time I visit the Crown Heights location.
